Bockshty

The home of the rayle (sic) boxty according to Leitrim people (though Cavan and Fermanagh people would disagree). Making boxty is a fine art and if carefully made over a long period it will clean one's digestive system out. Boxty is a type of potato cake made from mashed and grated potatoes mixed with flour. The cakes are boiled and then sliced and fried in butter.
